Ingredients:
1/4 c. C&C Raspberry Balsamic Vinegar 
1/4 c. C&C Hojiblanca EVOO (or any other strong EVOO)
1 head of Romaine lettuce, torn to pieces
1/4 lb. of Feta cheese, crumbled
1 1/2 cups of watermelon, cubed
Sea Salt (C&C New Zealand Sea Salt) Freshly ground pepper

Preparation:
Whisk together the balsamic vinegar and olive oil to create the vinaigrette. In a salad bowl toss lettuce with the vinaigrette. Sprinkle Feta and cubed watermelon on top. Drizzle a little more Raspberry Balsamic over the cheese and watermelon. Sprinkle with sea salt before serving.
