- Mixed baby greens
- 1 endive, finely sliced
- 2 Tbs. dried cherries
- 1 apple, sliced
- 3/4 c. Roasted Onion Olive Oil
- 3 Tbs. Red Apple Balsamic Vinegar
- 1 tsp. lemon zest
- 2 tsp. maple syrup
- Bleu cheese crumbles
- Toasted almonds
PREPARATION: In bowl, whisk vinegar, lemon zest, and syrup. Slowly whisk in olive oil, then salt and pepper to taste. Combine the greens, endive, cherries and apple and toss with dressing. Top with blue cheese and toasted almonds. A hearty salad perfect for Fall!
