Pineapple Gingertini

  • 3 oz fresh pineapple juice or pureed pineapple
  • 2 oz Grey Goose Vodka
  • 1 oz lime juice, freshly squeezed
  • 1 oz  orange juice, freshly squeezed
  • 1⁄2 oz simple syrup (see note*)
  • 1 1⁄4 tsp.  Honey-Ginger Balsamic Vinegar
  • 1 chilled martini glasses
  • Skewered pineapple chunk, wedge of lime and crystallized ginger for garnish

Simple Syrup Ingredients:

  • 1 c. water
  • 1 c. granulated sugar

Preparations: 

In a shaker with ice, add pineapple juice, vodka, lime juice, orange juice, simple syrup and balsamic vinegar and give it a shake. Pour into chilled martini glasses and garnish with fruit.  Servings: 1

Simple Syrup Preparations:

Combine water and sugar in small saucepan over medium heat until sugar dissolves. Increase heat and bring to a boil. Reduce heat and simmer for 5 minutes. Transfer to bowl and chill completely. Can be made refrigerated for 2 weeks.
